Parsley and Coriander Pesto

Fresh parsley and coriander combine nicely in a pesto that not only tastes great but helps the body to eliminate accumulated toxins and salts.

Ingredients:

  • 2 cups fresh parsley leaves
  • 1 cup of fresh coriander leaves
  • 4 – 6 tablespoons of olive oil
  • 2 – 3 cloves of garlic
  • 1 tablespoon of apple cider vinegar
    – or you can use lemon or lime juice
  • ΒΌ cup of pumpkin seeds
    – you could also add sunflower seeds.

Directions:

Place all ingredients in a food processor and blitz.

If I am using this for sandwich fillings I will add extra seeds to make it thicker than if I am using it as a sauce with grains or pasta. For a thinner sauce add extra oil. As this is a raw sauce I will often use pumpkin seed oil, which gives it a vibrant green colour.

Coriander is a rich source of vitamins K, A and C, and a good source of minerals like potassium, calcium, manganese, iron, and magnesium. It has anti-septic properties and calms digestion.

Pumpkin seeds are rich in a variety of antioxidant phyto-nutrients. They are a very good source of phosphorus, magnesium, manganese, and copper and a good source of zinc, iron and protein.
