Cauliflower Pizza Crust
Ingredients:
- 2 cups of grated cauliflower
- 3⁄4 cup almond meal
- 2 tbsp of chia seeds mixed with 6 tbsp of water and set aside (acts as binder)
- A pinch of unrefined sea salt
- 1 teaspoon of garlic powder
- 1 teaspoon of dried Italian herbs
Directions:
- Preheat the oven to 180°C.
- Finely grate the cauliflower or if you have a food processor chop into small pieces and blend on high until it resembles a fine grain.
- In a large mixing bowl, combine cauliflower, seasoning and almond meal.
- Stir in the chia seeds and water, mix and knead into a dough ball.
- Place the dough between two sheets of parchment paper to prevent sticking then roll out into the shape of a pizza crust.
- Bake the crust for 10-15 minutes. Remove from the oven and add toppings of choice.
- Return the pizza to the oven for 15 minutes or until cooked.
- Drizzle with extra virgin olive oil before serving.
Vegan Pizza Toppings
Creamed Pesto
Ingredients:
- 2 cups of fresh basil leaves
- ¼ cup of pine nuts, hazelnuts or pumpkin seeds
- ½ cup of cashew nuts
- ¼ cup of olive oil
- 6 sundried tomatoes chopped
- A pinch of unrefined sea salt
Directions:
- Soak the cashew nuts in water for 2 hours then drain.
- Put all ingredients in a food processor or blender and blitz.
Add chopped vegetables such as courgettes, mushrooms, olives, or whatever you have handy.
