Vegan Pizza

Cauliflower Pizza Crust


  • 2 cups of grated cauliflower
  • 3⁄4 cup almond meal
  • 2 tbsp of chia seeds mixed with 6 tbsp of water and set aside (acts as binder)
  • A pinch of unrefined sea salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried Italian herbs


  1. Preheat the oven to 180°C.
  2. Finely  grate the cauliflower or if you have a food processor chop into small pieces and blend on high until it resembles a fine grain.
  3. In a large mixing bowl, combine cauliflower, seasoning and almond meal.
  4. Stir in the chia seeds and water, mix and knead into a dough ball.
  5. Place the dough between two sheets of parchment paper to prevent sticking then roll out into the shape of a pizza crust.
  6. Bake the crust for 10-15 minutes. Remove from the oven and add toppings of choice.
  7. Return the pizza to the oven for 15 minutes or until cooked.
  8. Drizzle with extra virgin olive oil  before serving.

Vegan Pizza Toppings

Creamed Pesto


  • 2 cups of fresh basil leaves
  • ¼ cup of pine nuts, hazelnuts or pumpkin seeds
  • ½ cup of cashew nuts
  • ¼ cup of olive oil
  • 6 sundried tomatoes chopped
  • A pinch of unrefined sea salt


  1. Soak the cashew nuts in water for 2 hours then drain.
  2. Put all ingredients in a food processor or blender and blitz.

Add chopped vegetables such as courgettes, mushrooms, olives, or whatever you have handy.
